Charring chiles directly over a stovetop burner is quick and convenient, but it doesn’t work well on electric stoves—direct contact with an electric burner tends to singe rather than char. This little stovetop roaster, which fits right over a burner, eliminates that problem by essentially turning the burner into a grill. It’s also good for gas stoves when charring small chiles, which are hard to balance on the cooking grate.
