I was visiting Vancouver earlier this week, attending a cocktail convention and checking out the bar scene in the city. Bartenders are doing some great stuff up there, playing with bold flavors and new techniques in drinks. 

At the Fairmont Pacific Rim‘s lobby lounge, where they had on offer barrel-aged and carbonated cocktails, I also found a drink to share that doesn’t require any special equipment. The High Kick tastes predominantly of vanilla from the flavored vodka, with the lemon juice and slightly bitter, orangey Aperol playing supporting roles. The mint gives it a refreshing finish. 

This drink goes down real easy, so you might just want to make them two at a time.

1.5 fl. oz. Absolut Vanilla Vodka
.75 fl. oz. Aperol
.75 fl. oz. Freshly Squeezed Lemon Juice
.75  fl. oz. Simple Syrup
4 Mint Leaves

Shaken all ingredients until frothy and fine strain (to remove mint pieces) into a cocktail coupe and garnish with a mint sprig.
