
When it comes to April Fool’s Day recipes, some people can go a little over the top. But if you don’t actually want to eat it, why bother? This year, I’m celebrating with something much more delicious: a Rhubarb Fool. In fact, the name is a reference to its utter simplicity. Just five ingredients and two steps.
This fool happens to be flavored with spring rhubarb, so it’s especially appropriate to April, but the dessert is fantastic year-round with any type of seasonal fruit: in the summer, make it with mixed berries or just blueberries; in the fall with apple or pears, and in the winter with tropical fruits like mango or passionfruit.
Perhaps the name’s even a bit of a misnomer, because serving such an easy, delicious dessert makes you look like a bloody genius.
