A Korean-Style Dish Perfect for the Chinese New Year

I know this might be a little bit far-fetched and trust me, I completely understand that Chinese cuisine and Korean cuisine are both different and amazing things, each in their own right. But this recipe from Kitchen Confidante had my mouth watering at first sight and to be honest, a lot of the ingredients that Liren uses in this dish have some interesting symbolism tied to them when it comes to the traditions of the Chinese New Year.

Liren’s recipe for Slow Cooked Korean-Style Short Ribs with Noodles combines rice noodles, baby bok choy and beef short ribs, braised in a sauce of Asian pear, garlic, soy sauce and rice wine vinegar. In the tradition of the Chinese New Year, noodles that are left uncut in long strands symbolize a long life, while rice itself represents fertility, luck and wealth. Cabbages, like bok choy, represent bountiful prosperity and luck in many forms. Green vegetables represent strong family ties and apples and other fresh fruit (like the Asian pear, also known as apple pears) represent life, new beginnings, wisdom and peace. Garlic and chives stand for everlasting eternity. 

Sign me up! With all of those beneficial attributes, why wouldn’t you make this dish? If one flavorful bowl of braised short ribs over noodles could bring me longevity, prosperity and luck all in the coming year, I’m in. Besides, I’ve always been a sucker for anything braised. The combination of sweet and savory flavors and crunchy, smooth and crisp textures in this dish make it perfect for lunch or dinner, and I’d bet that the leftovers would be pretty darn good cold out of the fridge the next day.
