Butane torches are sold in kitchen stores for caramelizing sugar and meringue toppings. These torches are small and easy to handle, but chefs use propane torches instead. Why? Propane burns hotter than butane and provides a stronger flame that can be easily controlled to get the exact caramelization you want. Better yet, propane torches are less expensive to use than butane. Look for them at hardware stores.
