When applying an herb or spice rub to meat (as in the pork tenderloin provençal), one way to make sure you get an even coating is to spread out the rub and then roll the meat in it. It’s easy enough to do right on your cutting board, where, chances are, you were already mincing garlic or fresh herbs for the rub anyway. As your roll the meat in the coating, pat it down to help it adhere.
