A Salad That’s Anything But Spartan

It’s amazing how my understanding of the word “salad” has changed. Growing up, “salad” meant “good for you” and therefore “eat as a last resort.”  Of course, those were the days when salad=iceberg lettuce + January tomatoes.

Today’s salads are a world apart. And this Warm Strawberry Spinach Salad from blogger Jessica is a perfect example. She posts on How Sweet It Is about making this salad, which includes goat cheese, pecans, and other flavor delights.

It’s safe to say that any salad recipe that begins: “Heat a large skillet over medium heat and add bacon” is changing the salad equation, at least for me.
