Sweet potatoes are one of my favorite side dishes at Thanksgiving. I make a mean sweet potato pecan casserole, if I do say so myself.

Sweet potatoes are so versatile and have an abundance of health benefits. They’re loaded with vitamins and minerals, and are even low-calorie. You’ll see them on Thanksgiving dinner tables often disguised as a savory side dish, or showing their sweet side in a delicious pie.
