While we love cookbooks, there’s no denying the practicality of cooking from a tablet. There are plenty of apps for that, but The Professional Chef app from The Culinary Institute of America ($49.99, Inkling) is one of the best we’ve seen. It’s the CIA’s basic textbook brought to digital life. Though there are surprising omissions (like a recipe that tells you to bone a whole chicken but doesn’t tell you how), the app walks users through almost every fundamental cooking technique and includes lots of classic recipes, from Buttermilk Fried Chicken to Chocolate Mousse. Cool tools include videos, quizzes, interactive note-sharing, and “poptips” that lead to information, images, and web links
