To kick off my long weekend of daily cocktail postings from Tales of the Cocktail, I created this drink at home, named in honor of Jack, our mutt. It’s kind of a cross between a daiquiri (light rum, lime, sugar) and a caipirinha (cachaca, lime, sugar). I recently read a story about honey in cocktails in Imbibe magazine, and their idea for honey simple syrup inspired me to add it to the mix.
The Apple Jack
Serves one
2 1/4 oz. cachaca
1/2 oz. honey syrup*
1/2 oz. fresh lime juice
All-natural apple soda, such as Izze Sparkling Apple
Put the cachaca, honey syrup, and lime juice in a chilled cocktail shaker filled with ice. Put the lid on the shaker and make sure you have a tight seal. Shake as hard as you can for 7 to 10 seconds and then strain into a chilled martini glass or coupe. Top off with the apple soda and serve.
*To make honey syrup, stir together equal parts honey and hot water until the honey is dissolved. Let the syrup cool to room temperature before using.
