
Right now I’m ignoring the rain clouds and surrounding myself with anything and everything that speaks “spring,” including clothing, music, and especially food. When I saw the Sweet Lime Cupcakes with Raspberry Frosting post from Eva at Adventures in Cooking, I decided it belonged in my feel-good consortium. The presentation of this palate-pleasing pairing is one lovely enough to be the center of attention on your Easter or Mother’s Day table.
Eva uses the zest and juice of the lime in the cupcake mixture, and then tops off the finished product with a homemade raspberry buttercream frosting, which she makes with crushed raspberries.
The refreshing flavor duo in these sweet treats certainly captures the spirit of spring.
