Pancakes are one of my favorite weekend breakfast foods, but any classic standby can use a little perking up. That’s why I can’t wait to try Joy the Baker’s recipe for brown butter citrus pancakes this weekend. I love the idea of making your average pancakes a little more exciting by adding brown butter, then ramping it up even more with some of the best produce winter has to offer. The best part of this recipe is that Joy not only tops the pancakes with beautiful segments of bright grapefruit, blood orange, and tangerine, but it also incorporates citrus zest into the pancake batter. The combination hits my favorite breakfast notes, and it looks so delicious, I could even skip the maple syrup on top.
