
February's Challenge: Pancetta
There’s a fun blogger event going on right now: Charcutelpalooza. It’s even fun to say: shar-coo-ta-pa-loo-za. Spearheaded by Cathy Barrow of Mrs Wheelbarrow’s Kitchen and Kim Foster of The Yummy Mummy, this year-long meat preservation fest has food bloggers from all over coming together to make and post about monthly charcuterie challenges, based on recipes from Michael Ruhlman and Brian Polcyn’s Charcuterie: The Craft of Salting, Smoking, and Curing. January’s challenge is duck prosciutto, and in February, the Charcutepaloozians will tackle pancetta. Follow the action on Twitter (hashtag #Charcutepalooza) and Facebook, as well as all of the participants’ blogs—at last count, there were over 175 bloggers jumping on the meat wagon.
