Jim Meehan, bartender extraordinaire and Fine Cooking contributor, made a fantastic cocktail last night featuring Jose Cuervo Platino, a handcrafted 100% blue agave silver tequila. The smooth tequila paired with lime juice, rich sherry, and fig jam was incredible!
2 oz. Jose Cuervo Platino
1 oz. fresh lime juice
1/2 oz. Dry Sac sherry
1/4 oz. Benedictine
1 tsp. St. Dalfour Royal Fig jam
Slice of fresh fig for garnish
Add everything but the fresh fig to a mixing glass and fill with ice. Shake as hard as you can for 7 to 10 seconds and then strain into a chilled coupe. Garnish with the slice of fig.
