With it’s complex interplay of hot, sour, sweet and spicy flavors, it’s no surprise that Thai food has exploded in popularity. Ingredients such as fresh lemongrass and curry pastes are fast becoming supermarket staples, which means it’s easy to reproduce your favorite dishes from Thai restaurants at home. To start, we’ve got three versions of pad thai: one that sources authentic ingredients and shows you the step-by-step techniques to make this iconic noodle stir-fry. If you’re looking to make pad thai tonight, choose one of our quick renditions: a shrimp pad thai, or one with tofu, scallions & peanuts. Curries are another Thai dish that lend themselves well to weeknight cooking: with jarred curry pastes from the supermarket, you can make a Red Curry with Shrimp, Green Curry with Cod & Green Beans, or a Country-Style Curry with Beef in just minutes. Or, if you have a bit more time for shopping and prep, try these same recipes using a homemade curry paste that you’ve ground by hand in a mortar and pestle.
