For many of us in the test kitchen, the wooden spatula is a low-tech secret weapon. Compared with a wooden spoon, its sturdy flat edge does a better job of scraping up those yummy brown bits at the bottom of a skillet, stirring a custard to keep the egg from overcooking on the bottom, and preventing a crust from forming on the bottom of a pot of mashed potatoes.
