This is the way to make the classic hamburger–the one you remember from your teens, the one you dream about sometimes. Your guide began cooking as soon as he was tall enough to see over the grill at his parents’ restaurant, which was known for its homey food. His favorite was their hamburgers: “perfect patties of fresh, not-too-lean beef, garnished with melted American cheese, crisp lettuce, ripe red tomatoes, and served on a toasted bun.
