This Grilled Peach Salad is beautiful, colorful and perfect for summer. Bottom line. Jeanine and Jack of the blog Love and Lemons are creative food-lovers with a passion for using whole, unprocessed ingredients at the peak of their season. That, my friends, is what this salad is all about.

This salad utilizes gorgeous, juicy summer peaches with their charred caramelization, fresh mint and basil in a smooth pesto, milky, fresh mozzarella and crunchy, rich pine nuts. The arugula that acts as the bed for the salad adds a crisp, peppery bite to set off all the contrasting flavors around it.

There’s nothing better than a summer salad that covers all the bases. It’s sweet, salty, savory and bitter and has a wonderful variety of flavors ranging from creamy to crisp. Salads like this are wonderful for lunch during the summer and are also the best way to end the night on a fresh, light note.

Try this juicy peach salad today and visit Love and Lemons for many more incredible recipes.

This salad is fabulous and a stunning presentation. I did add a sprinkle of french feta cheese along with the mozzarella. The pesto gives it a wonderful flavor. I served it with grilled boneless pork chops with a coriander and chile powder rub.
