Grilling with mayonnaise

Before grilling, I like to brush my vegetables with mayonnaise instead of olive oil. Whether plain or seasoned with garlic, herbs, or spices, the mayonnaise clings effectively and imparts great flavor to the vegetables. It also forms a protective coating, keeping the vegetables from drying out on the grill. If used judiciously, it doesn’t need to add any more fat to your food than using oil would.
