Recipe Demo: Chocolate-Nut Zucchini Bread
Grow zucchini, and by late summer, inevitably, you end up with more than you know what to do with. You could freeze it, but there are some drawbacks. I recommend preserving squash by turning it into this sweet, tender quick bread. I promise, you’ll have no problem unloading your extra zucchini this way (who wouldn’t want a slice of chocolaty bread?) and the bread freezes extremely well.
