Before I had granite countertops, I used ice packs to cool my counters so it would be easier to make pastry dough. I wrapped the frozen packs in kitchen towels to keep the countertop dry. I set the packs on the counter for an hour or so before working with the dough. I still do this in the summertime; it makes working with dough much easier.
