I have a confession: I really love good vegan food. And I’m not talking about seitan and scary fake meats; I’m talking about rich vegetable curries, cashew cream, chocolate-avocado mousse, flavorful pestos, and rich mushroom sauces–food that warms and nourishes you from the inside-out. Though I love my butter, steak, and chocolate pot de creme, about 60% of the food I eat regularly resembles the vegan fare that I so admire. It’s a lifestye that often falls into stereotypes of radicalism and deprivation, when it’s really a wildly creative, colorful, freestyle way to think about what you eat and how to cook.
In the same vein, some of my favorite food blogs happen to be vegan. The authors are some of the most creative cooks on the Internet, completely reinventing well-known recipes and churning out something equally delicious, but in an entirely different league that renders comparing the omnivorous to the vegan pointless. Here are a few examples, starting with pie (Happy Pi Day, everyone!):
-Manifest Vegan’s Banana Cream Pie with a Date/Almond Meal/Walnut Crust and Cashew Cream.
-Veggiebelly’s Afghan Sweet and Savory Braised Pumpkin.
-Would Rather Gather’s Creamy Butternut Squash and Mushroom Lasagna with Walnut Crumb Crust.
-Naturally Ella’s Whole Wheat Vegan Cinnamon Rolls.
-The Chocolate Fig’s Baked Buckwheat Oatmeal with Cranberries, Pistachios, and Figs and Squash Bowls with Chard, Beans, and Shiitakes.
-The Tolerant Vegan’s Maple Peanut Butter French Toast.
–Easy Creamy Tomato Barley Risotto at Oh She Glows.
