I used a permanent marker to write ruler measurements like 1/2 inch, 3/4 inch, and 1 inch on the back of my cheap, flexible, translucent chopping mat. Then, if a recipe calls for carrots diced 1/2 inch, for example, I can use the marks to guide me without having to pull out a ruler. This helps me prep my ingredients more precisely so they’ll cook evenly. Be sure to write the numbers backward so they’ll read properly on the good side of the mat. I also draw measured circles on another mat for rolling out pastry dough.
