Powdered pectin shortens the cooking time and eliminates the guesswork involved in gauging the correct consistency of marmalade (see “Preserving the Season: Lemons”, issue #97, p. 19). If you can’t find pectin at your local supermarket or hardware store (it’ll be with the canning supplies), ykou can order Ball fruit gell pectin from Canning Pantry. A 1.75-oz. box costs $2.29.
