Some vegetables have a habit of adhering to the side of the knife as you are slicing. To solve this problem, Wüsthof has expanded its Gourmet and Classic lines with a knife that has a deflecting ridge. The 8-inch chef’s knife is designed with a series of holes in the blade to create less surface for vegetables to stick to and a ridge above the holes on the blade’s right side to separate, or deflect, the slices from the knife as you cut. It’s ideal for its intended purpose, especially for sticky vegetables and fruits like potatoes, butternut squash, and mangos and it works well for other slicing and chopping chores too. Keep in mind that it’s sold with the deflecting ridge only on the right side, meaning it works  only for right-handed people.
