I simply can’t get enough of grilled food in the summertime. Who can resist the delectable flavor of tender ribs, juicy burgers, or a well-seasoned pork kebab? Then there’s chicken…

Chicken is tricky. All too often, I find myself disappointed by the dried-out, over-charred bird sitting on my kitchen counter. But, Rachel Rappaport, creator of Coconut & Lime, has piqued my chicken curiosity with her Citrus Rubbed Coca-Cola Chicken recipe. The soda and the rub help to seal in the chicken’s juices and emit a smoky, citrusy scent during the grilling process. The orange zest and lemon pepper seasoning combined with the Coca-Cola give the chicken a unique refreshing flavor—and Rachel insists this is the juiciest chicken she’s ever made. Although the recipe calls for Coca-Cola, alternative carbonated beverages may be used to infuse the chicken with your favorite fizzy flavor.
