This oil, from the California Rice Oil Company, has a 490°F smoke point, higher than that of canola, peanut, or grapeseed oil. We tested it while sautéing chicken breasts and searing beef, and it held up well to the high heat. With its slightly nutty flavor, it’s a good choice for vinaigrettes, too. But it’s not just versatile—it’s also hypoallergenic and high in antioxidants. A 500ml bottle is $6.99 at www.californiariceoil.com; 866-742-3645.
