Maybe it’s all the gorgeous soups I’m seeing in the Soup Week Challenge or my prep for the Soup-er Tweetup we’re hosting today, but I’ve had soup on the brain 24/7 lately. During breakfast, I find myself thinking about what soup I’ll have for lunch. During lunch, I’m planning out a dinner soup (ever notice how certain soups want to be lunch and others, dinner?). I may have a problem.
Luckily, I found a post on The Curvy Carrot blog that’ll satisfy a real soup craving in a flash. The Curvy Carrot’s Shanon Lacy makes French Onion Soup Crostinis that look every bit as beautiful as the classic soup in a crock, yet they’re quick and simple to make.
You simply can’t rush an excellent French Onion Soup, nor should you try. Anne Willan’s version requires at least an hour, but it’s time well spent (a conclusion you’ll come to after the first slurp). But, thanks to Shanon, you can enjoy the flavorful essence of Anne’s classic in half the time if you’ve got a fresh French baguette and a craving that just can’t wait.
