Orange, Green, and White: just like the Indian flag!
With the current popularity of Slumdog Millionaire, and the light it has shined on India, my stomach couldn’t help but take notice. I decided it was time to make some Indian food but sadly I just haven’t had the time.
When I think Indian food, I think garam masala. If you’ve never heard of garam masala, it is a wonderful blend of several toasted spices which are then ground together. I was lucky enough to receive a gift of homemade garam masala from my friend Biltu’s mom, Mrs. Saha. I have been treasuring this bag since it was given to me. The smell is intoxicating and the fact that it is her unique blend makes it so special.
When I want an Indian quick fix, I add it to my sweet potato home fries. Just peel and cube some sweet potatoes, and stir fry them with chopped green peppers and onions. Add a bit of salt and pepper and then cook covered until the sweet potatoes are fork tender. Add the garam masala near the end; it sometimes can get a little bitter if you cook it too long. Add as much or as little as you like, I sprinkle in quite a bit.
It may not be a traditional Indian meal but it tastes wonderful and gives you some of the essence of India.
