Press any Fine Cooking editor, and she’ll have to admit that we’ve all been on a bit of a brown-butter jag lately. If we get a recipe using brown butter, we all seem to swoon over it. To whit: the amazing brown-butter pumpkin layer cake on the cover of last Thanksgiving issue, the seared scallops with brown butter and cauliflower…and more to come.

So of course I couldn’t resist the Caulflower-Apple Soup with a base of brown butter by Karen at the SoupAddict blog. Brown butter is the perfect foil to cauliflower’s natural nuttiness, and a little touch of sweetness from apples? Sign me up!
