There’s something primal in our cravings for the first signs of green after a long winter of root vegetables. Forget the groundhog, the true signs of spring are asparagus, artichokes, fresh peas, morels, and fava beans. The fact that their peak season is often so short motivates us all the more to make the most of them while they’re here.
