Each week I am presented with a stack of recipes that need testing.  Some of these are completely new; some are recipes in development, while others are simply cross-tests.  With cross-testing we have already tested the recipe once, and it was pretty much successful.  Instead of letting a recipe pass on the first try, we have another recipe tester try it to make sure they achieve the same results, or to see if they interpret the recipe in the same manner.  Sometimes we miss things, or decipher language differently so by testing each recipe at least twice we know that what we are publishing is definitely not going to flop in your kitchen.
