In a good way, this cookbook is more about cooking than recipes. Gillingham, the founding editor of Apartment Therapy’s cooking site The Kitchn, and Duran, the site’s executive editor, guide readers on how to set up and stock a kitchen and teach techniques that build skills. When recipes do appear (in the second half of the book) they are enticing. The Roasted Chickpeas with Dukka (an Egyptian nut and spice blend) were easy and delicious. The Foolproof Salmon with Herbs taught me a new trick, namely baking the fish in a low 250-degrees oven, which gives it a silken texture. Though readers of all skills can enjoy this book, it would make a great gift for someone just starting out on their own.
