One trick for maximizing flavor in baked chicken is to tuck under the skin a bit of butter mixed with other ingredients like herbs and mustard (this is called compound butter). The butter mixture is easy to make, adds flavor, and helps keep the chicken meat moist. The recipe for Lemon Tarragon Chicken calls for tarragon butter; when making it, be sure that the butter is very soft or it won’t combine well with the other ingredients. If tarragon isn´t available, substitute another fresh herb, such as parsley or savory.
