Vegetables and Orzo Baked in Parchment

Cooking “en papillote” (or in paper) is a great way to capture flavors and create a unique presentation for fish, vegetables, or many side dishes. In this video demonstration, teacher and chef Brian Patterson creates a light, flavorful combination of vegetables and cooked orzo to cook “en papillote.” This course is easily prepared ahead of time and cooks in just 15 minutes.  Although it’s prepared in an oven, food prepared en papillote is actually steamed, guaranteeing a moist, flavorful finished dish.Cooking “en papillote” (or in paper) is a great way to capture flavors and create a unique presentation for fish, vegetables, or many side dishes.
