With my kids home all day for the forseeable future, I’m giving them some cooking lessons. This time, we take on my easy one-pot mac and cheese recipe, but talk about how easy it is to make substitutions in this era of grocery shortages. We swap out the cheeses in the original for what we have at home, and trade the prosciutto and asparagus for ham and peas (let’s face it, the kids prefer it that way anyway).
