Summer means feeling overrun by squash of all sizes, shapes, and colors. So when cooking it starts to feel like a task, turn to these super-quick recipes: crunchy raw salads, grilled sandwiches, tacos, and more. You can use zucchini, pattypans, or any summer squash for most of these recipes, and with this many options, you may even be sad to see the season end.
