Few things signal summer like biting into a fresh lobster roll. Though the Eastern seaboard is divided over which of the two styles is the “real” lobster roll: a cool, mayo-dressed salad (Maine-style) or warm lobster meat, tossed in butter (Connecticut), the thing we can all agree on is that fresh lobster meat is paramount. That said, if lobster is not in your budget (or not available), you can make delicious lobster roll-inspired sandwiches with crab and shrimp.
