Spicy Pulled Chicken Lettuce Wraps with Peanut Sauce

Ah the glory of cook-once-eat twice-meals. This week’s menu makes double use of leftover roasted chicken or turkey. You can roast a turkey or two chickens for Sunday’s meal (not included in this shopping list) or simply pick up a rotisserie chicken.
