Spicy Pulled Chicken Lettuce Wraps with Peanut Sauce

Ah the glory of cook-once-eat twice-meals. This week’s menu makes double use of leftover roasted chicken or turkey. You can roast a turkey or two chickens for Sunday’s meal (not included in this shopping list) or simply pick up a rotisserie chicken. On Tuesday it’s transformed into a hearty soup and on Thursday into spicy Asian-inspired lettuce wraps.  Get the week’s shopping list here (ingredients for suggested side dishes not included on the list).
