The storied Australian dessert named after ballerina Anna Pavlova is having a moment. Perhaps because it’s utterly Instagrammable, Or perhaps because it’s so eminently adaptable, with its crisp meringue shell (gluten-free, to boot) topped with creamy filling and fresh fruit. It can be made in a variety of sizes, feature fruit from any season (or no fruit at all!), be tweaked to be kosher for Passover, and even vegan! Here are a few of our favorite takes.
