Grill-Roasted Honey Barbecued Chicken

I have never been a “big-shopper.” For me, my enjoyment with cooking is deciding on the fly what to have for dinner through inspiration… what is fresh and in season, a recipe which recently inspired me, the weather, how long my day was, or just what I FEEL like during a nightly stroll around the outer aisle of my favorite supermarket. Needless to say, this pandemic has not been a cooking moment for me: my glasses fogging up from my mask as I move as quickly as possible through my list and the store trying not to forget all of the special requests. Thankfully, I have my Fine Cooking go-tos. They have simple ingredients and I know they will be foolproof, delicious, and fairly effortless, leaving me plenty of space to contemplate my cocktail.

    Garlicky Tortellini, Spinach & Tomato Soup

    This is my “it's-cold-outside-and-I-don't-feel-well” go-to (and yes, even though it's May, we're still having plenty of cold days). I almost always have all of the ingredients. If I don't have fresh spinach I substitute with frozen, and leave out the fresh basil if absolutely necessary. The smell alone of the garlic simmering in the butter makes me feel ALL BETTER.
