What is it?

An intensely flavored liquid made by combining almond oil (from bitter almonds) with ethyl alcohol, almond extract is used similarly to vanilla extract to add flavor mainly to baked goods and other desserts.

Don’t have it?

In some recipes, amaretto can stand in for almond extract.

How to choose:

Choose those that are all-natural. Artificially flavored extracts are not as complex tasting and often taste fake.

How to prep:

Because its flavor is strong, measure accurately; too much extract can easily overpower other flavors.

How to store:

Store well-sealed in a cool, dry place.
