What is it?

Cheese ravioli are pillows of egg pasta dough filled with a mixture that traditionally involves ricotta and Parmiggiano Reggiano, but different combinations are also delicious. While unstuffed pastas are often paired with a complex sauce (spaghetti alla puttanesca or fettuccine Bolognese, for example), ravioli are best served in a light cream sauce or in a broth or with a simple roasted tomato sauce or brown butter with Parmesan. Ravioli are also available for quick meals in the refrigerated section of the supermarket or, better yet, at specialty Italian markets.
