What is it?

Cheese ravioli are pillows of egg pasta dough filled with a mixture that traditionally involves ricotta and Parmiggiano Reggiano, but different combinations are also delicious. While unstuffed pastas are often paired with a complex sauce (spaghetti alla puttanesca or fettuccine Bolognese, for example), ravioli are best served in a light cream sauce or in a broth or with a simple roasted tomato sauce or brown butter with Parmesan. Ravioli are also available for quick meals in the refrigerated section of the supermarket or, better yet, at specialty Italian markets.

    Ravioli with Grilled Vegetable Sauce

This sauce recipe will cover two pounds of pasta, so you can freeze half to enjoy later. The sauce is also delicious over tortellini, gnocchi, or even polenta.
