tuong ot toi; chili garlic sauce

What is it?

A chile sauce that’s a blend of chiles, garlic, salt, and vinegar. Similar to Asian chile pastes, the mixture is generally a little looser in consistency and often a little milder. It’s commonly used to flavor Asian soups, sauces, and stir-fries. It’s often used in the classic Thai dipping sauce, nuoc cham.

Don’t have it?

Substitute other Asian chile pastes made with garlic or finely minced fresh hot chiles and freshly minced garlic.

How to prep:

Spicy Roast Chicken Combine soy sauce with chili garlic sauce. Brush the mixture on the inside and outside of a whole chicken and roast in a 350°F oven.

Chicken Lettuce Wraps Cook ground chicken with diced onions and mild green chiles until cooked through. Add chili garlic sauce, fish sauce, sugar, and lime juice and stir to coat the chicken. Serve spooned into Boston lettuce leaves and drizzled with soy sauce.

“Banh Mi” BURGERS Season ground pork with chili garlic sauce and fish sauce and shape into patties. Grill and serve in crusty toasted buns smothered with mayonnaise and layered with sliced cucumbers, jalapeños, cilantro, and green leaf lettuce.

Spicy Split Pea Soup Add chili garlic sauce to taste to a bowl of your favorite split pea soup.

How to store:

Store in the refrigerator once opened; it will keep for years though may lose some potency over time.
