What is it?
Comte is made from unpasteurized (raw) cow’s milk and comes from the Franche-Comté region of Eastern France. The rind is light brown in color and the interior is usually creamy yellow that is occasionally studded with tiny air pockets. It is a firm cheese, aged up to a year, with a nutty, slightly sweet flavor, and pairs well with rustic, assertive red wines.
