What is it?

Made from pork back fat that’s been cured in salt, herbs, and spices, lardo is an Italian delicacy. It has a mild porky flavor and a luxurious melt-in-your-mouth texture.

Try draping a thin slice over warm grilled bread. It’s also good on pizza (after baking) or focaccia, wrapped around shrimp before grilling or searing, or served over white beans, polenta, or risotto.

How to choose:

Look for lardo in good Italian, Spanish, or specialty markets.
