What is it?

Merlot is the comfort food of red wines; its lush, plummy fruit flavor, herbal notes, and soft, velvety texture pair well with a wide range of foods like burgers and meatloaf, barbecued chicken, even macaroni and cheese. Merlot is a great red wine to cook with because it’s flavorful but has moderate tannins.

Add merlot to slow-cooking stews or tomato sauces. Use it for pan sauces for seared lamb, duck, chicken, or beef. You can even use it for flavoring desserts.

Don’t have it?

You can usually substitute another medium-bodied red like Pinot Noir, Sangiovese (the main grape in Chianti), or a lighter-style Cabernet.
