What is it?

One of the many variety of lentils, pink lentils become very soft when cooked, making them ideal for soups and purées. Often used in Indian cooking. Like many lentils, they have a warm, earthy flavor.

Kitchen math:

1 lb. = about 2 1/4 cups = about 5 cups cooked

Don’t have it?

Yellow split peas are often the best substituion.

How to choose:

If you’re lucky, your supermarket carries pink lentils. If not, you can find them at Indian markets and through mail order.

How to prep:

Pick the lentils over for tiny stones or other debris and rinse well. They don?t need soaking, they cook in about 30 to 45 minutes.

How to store:

Stored airtight in a cool dry place, lentils will last at least a year.
