What is it?

Shown here cut into cubes for stewing, the meat from the shoulder (and sometimes arm) of a veal calf, veal shoulder can be somewhat tough, since it’s well-excercised and full of connective tissue. Like pork shoulder and lamb shoulder, this makes it an excellent candidate for moist-heat cooking methods, such as braising or stewing.
