German- and Swiss-inspired fare helps warm you after a chilly day on the slopes. Best of all, most of it can be made ahead, with minimal fussing in the kitchen when you just want to kick back with a cocktail or beer. The beer-braised bratwursts are topped with a tangy make-ahead pickle slaw. The Swiss macaroni & cheese–a stick-to-your-ribs dish if there ever was one–can be assembled completely in advance and just baked shortly before dinner. And the German pear pancake comes together quickly after dinner.


Menu Timeline

1 Day Ahead

  • Make the caramelized onions for the mac & cheese.
  • Make the applesauce.

Before skiing

  • Make the pickle juice slaw.
  • Cook the pasta and potatoes. Layer in the baking dish with cheese, cream, and onions. Refrigerate.
  • Blend the batter for the pancake. Refrigerate.

30 Minutes Ahead

  • Pop the macaroni and cheese in the oven.
  • Cook the bratwursts.
  • Rewarm the applesauce.

After Dinner

  • Make the pear pancake.
